Dijon 'Chicken' and Potato Burrito


One of my favorite weeknight meals, just wrapped up in a flour tortilla with melted cheese! Perfect way to use up leftovers from the night before!

Ingredients:

2 pounds of red potatoes, chopped

2 packages of Beyond Meat Chicken Strips

2 tbls of chicken-less broth

1 cup of water

1/4 cup of maple syrup

3/4 cup of dijon mustard

2 tbl of country style dijon

Follow Your Heart Mozzarella

Avocado

Flour Tortillas

Oil

Salt and pepper

Directions:

Preheat oven to 425

Toss your potatoes in a little oil

Season with salt and pepper

Place onto a baking sheet

Bake in preheated oven for 30-40 minutes, turning halfway through

In a large pot add your water and chicken-less broth

Mix well and heat over medium high

Add in your strips

Cook for 6-8 minutes until heated thoroughly

Remove strips from liquid and chop into bite size pieces

Return to liquid and let sit for 30 minutes or so

When potatoes are golden remove from oven and set aside to cool slightly

Mix your maple syrup and two mustard's

Mix well

Remove chopped strips from liquid and place into maple mustard mix

Toss well to fully coat, adding more mustard and maple syrup if needed

Place into prepared baking sheet and place under the broiler

Broil for roughly 6-8 minutes, turning every 2 minutes

Remove

Prepare burritos

Place tortilla on working surface

Sprinkle with a generous amount of cheese

Top with your potatoes, avocado and chicken

Roll up into a burrito

Heat a little oil in a non stick pan

Place burrito seam side down into hot oil

Fry on each side until golden

Repeat with remaining burritos

Serve and enjoy!
