Apple Pie Galette

Such an easy way to enjoy apple pie and if you're anything like me, this is the perfect ratio of pastry to fruit. Topped with a fresh scoop of vanilla ice cream makes this one of my new favorite desserts!


Vegan friendly pie dough round

2 sweet apples (peeled, cored and sliced)

1/3 cup of brown sugar

1 rounded tbsp of flour

Juice from 1/2 lemon

2 tsps cinnamon

1/3 cup of chopped walnuts

Biscoff cookie butter

Vegan caramel, we used natures charm salted caramel

1-2 Tbsp vegan egg or butter

Vegan Ice Cream


Preheat oven to 400

In a large bowl add your sliced apples

Squeeze lemon on top and mix

Sprinkle in your brown sugar, flour and cinnamon

Mix until apples are fully coated

Roll your pie dough onto baking sheet

Spread evenly and generously with cookie butter

Add your coated apples on top, leaving 2 inches of edge with no apples

Fold your edges over to form crust over the apples

Drizzle apples with a little vegan caramel

Brush edges with vegan egg or melted butter

Top entire dish with walnuts

Bake in preheated oven for roughly 30 minutes until golden

Serve with vegan ice cream and more caramel
