Banana Crumb Muffins




Banana muffins are already the most delicious little treat. But when you top them with a sugary crumble it makes THE MOST SENSATIONAL treat. You'll never make banana muffins again without it. You can also do this in a loaf pan. Today we are using walnuts inside but you can add whatever you'd like. Chocolate chips would be lovely.



Ingredients

4-5 Really Ripe Bananas, the more brown spots the better

1/3 cup of melted butter

1 Vegan Egg (I used 1/3 cup of just vegan egg)

2/3 cup of white sugar

1 tsp of baking soda

Splash of vanilla

Pinch of Salt

1.5 cups of All Purpose Flour

1 rounded cup of walnuts

6 large muffing tray


Crumble Topping

Mix together 1/2 cup brown sugar, 1/2 tsp cinnamon, 2-3 tbsp flourMix wellCut in 1-2 tbsp of butter with a forkFork until it becomes crumbly like wet sand, sometimes it’s good to use your hands




Directions

Preheat oven to 350

Mash your bananas in a large bowl

Mash until there are no clumps

Add in your melted butter and mash the melted butter into the bananas

Mash until creamy

Add in your prepared vegan egg, sugar and vanilla

Stir until well mixed

Stir in your salt and baking soda

Add in your flour and stir until mixed (don't over mix)

Gently fold in your walnuts

Spray your Muffin pan with baking spray

Pour spoonfuls into muffin tinsSprinkle top of each muffing with crumble mix

Bake until gold and toothpick comes out clean, roughly 30-35 minutes

Remove from oven and cool 5 minutes

Serve and enjoy!
