Beyond Quesadilla



Quesadillas are the perfect go-to recipe. And when loaded with perfectly seasoned Beyond Beef, Peppers, Chiles and Colby Jack Cheese it's everything you could wish for and more.


Ingredients

1 package of Beyond Meat, Beyond Beef

1/2 onion, diced

4 oz can diced green chiles

1 red bell pepper, diced

1 Edward and Sons Not-Beef Bouillon Cube

1/3 cup of water

1 tsp garlic powder

Pinch of Salt and Pepper

Flour Tortillas

Violife Colby Jack Shreds

Oil



Directions

Heat a large frying pan over medium high heat

Add a little oil

Add in your onion and saute until translucent

Crumble in your beyond beef

Cook for 2-3 minutes

Add in your diced green chiles and diced red bell pepper

Season with garlic powder and salt and pepper

Mix well

Cook until meat is starting to brown

Add in your beelfess cube and water

Mix well and cook until liquid is evaporated and meat mixture is thickened

Turn off heat and let cool for 5 minutes

Remove from pan and wipe pan clean

Return pan to heat

Add your tortilla to pan

Sprinkle half the tortilla with a good amount of colby jack shreds

Top with a generous portion of your meat mixture

Sprinkle a little more cheese on top

Fold over

Cook on each side until tortilla is golden and cheese is melted

Serve and enjoy!*
