Big Mac Cheeseburger Cups



Delicious Big Mac inspired cups! Perfect for parties!


Ingredients

1/2 onion, diced

12oz vegan ground meat, we used impossible

1/3 cup ketchup

Salt and pepper

7-10oz vegan cheese shreds

1 can of vegan friendly biscuits

Lettuce

Pickles

Vegan Thousand Island

Sesame seeds

Vegetable oil


Directions

Heat a large non stick pan over medium high heat

Add in a little oil

Add in your onion

Cook for roughly 5 minutes until translucent

Add in your vegan grounds

Crumble and cook until starting to brown

Season generously with salt and pepper

Add in your ketchup

Cool for 2 minutes

Add in roughly 1 cup of vegan shredded cheese

Cook for 2 minutes

Turn off heat

Set aside

Preheat oven to 375

Roll out each biscuit to a disc

Place disc inside greased muffin cups to form cups

Sprinkle bottom with a little cheese

Top with a large spoonful of ground mix

Sprinkle tops with cheese

Top each cup with a sprinkle of sesame seeds

Bake in preheated oven for 20 minutes

Remove from oven when golden

Let cool 2-5 minutes

Top each with shredded lettuce and chopped pickles

Drizzle with Thousand Island

Serve and enjoy!
