Buffalo Chicken Stuffed Mini Peppers

Anything buffalo sauce and I'm sold! These delicious sweet mini peppers are stuffed with a hearty mix of vegan chicken and cheeses, buffalo sauce and celery and then baked to perfection. They make a perfect party appetizer!


2 cups vegan chicken, cooked and chopped

1 cup chopped celery

8oz vegan cream cheese

1 cup of shredded vegan yellow cheese

1/2 cup buffalo sauce

Roughly 12 sweet mini peppers

Chopped Chives

Vegan Ranch


Preheat oven to 375

In a medium bowl combine your vegan chicken, celery, cream cheese, yellow cheese and buffalo sauce Mix well

Slice your peppers in half, from top to bottom

Place onto greased baking sheet

Stuff each half pepper generously with buffalo mix

Bake in preheated oven for 30 minutes until starting to brown

Drizzle with vegan ranch and garnish with chopped chives

Serve and enjoy!
