This Chicken Parmesan Soup has everything you love about the classic dish served up in one cozy, comforting bowl.
It’s warm, hearty, and perfect for weeknight dinners, cold nights, or when you’re craving Chicken Parm without the mess. One pot, big flavor, and total comfort food vibes.
Ingredients
12-16oz vegan chicken pieces
4 tbsps vegan butter
1/2-1 onion, diced
2-3 garlic cloves, minced
1 tsp crushed red pepper
1/2 tbsps Italian seasoning
2-14.5oz canned diced tomatoes
1 bouillon cube
4-6 cups broth
12oz uncooked pasta
7oz shredded mozzarella
Pepper
Parmesan and basil for garnish
Crispy panko breadcrumbs*
Oil
*I like to cook the breadcrumbs slightly in a little butter until golden
Directions
Heat a large stock pot to medium high heat
Add in a little oil
Add in your vegan chicken pieces
Cook until browned
Remove from pot
Return pot to heat
Add in your butter
Once melted add in your onion
Sauté until translucent
Add in your garlic and cook 1-2 mins
Add your crushed red pepper and Italian seasoning
Mix well
Add in your tomatoes, bouillon cube and broth
Mix and bring to a boil
Once boiling add in your pasta
Cook until al dente
Return your cooked chicken pieces
Add in your mozzarella
Mix until melted
Season with black pepper
Turn off heat
Plate
Garnish with Parmesan basil and breadcrumbs
Serve and enjoy!
