French Onion Butter Beans

Caramelized onions, creamy butter beans, and melty cheese come together in this cozy, French onion-inspired dish that tastes like soup… but better. Comfort food in under 30 minutes!


Ingredients

1/4 cup vegan butter

1 large or 2 small onions sliced thin

1/4 cup balsamic vinegar 

2-3 cloves garlic minced

1-2 tbsps fresh chopped thyme

2-14 oz cans butter beans

1/3-1/2 cup broth 

3/4 cup shredded mozzarella

1/3 cup shredded Parmesan

1 tsp black pepper or more 

Grated Parmesan for serving 

Bread for serving


Directions

Heat a large pan over medium heat

Add in your butter

Once melted add in your onions

Cook stirring often until starting to caramelize

Add in balsamic vinegar

Cook down until balsamic is thickened 

Add in garlic and thyme 

Cool for 2 minutes

Add in your butter beans and broth 

Cook until thickened

Add in your cheeses

Mix until melted 

Season with pepper

Remove from heat

Garnish with Parmesan and thyme

Serve with bread
