This dip is so addicting. It's fresh and packed with so many wonderful flavors.
Ingredients
1 tbsp vegan butter
1-2 jalapenos, chopped
1/2 cup vegan mayo
1/2-1 bunch of cilantro chopped
16oz of frozen, fire roasted corn (or you can make your own roasted corn, roughly 2-3 cups)
Juice from 2 limes
Few pinched of paprika
Salt and pepper
1/2 rounded cup of crumbled vegan feta
Tortilla Chips
Directions
In a large frying pan melt you butter over medium high heat
Once melted add in your jalapeno
Cook for 2-3 minutes
Add in your roasted corn, cook for roughly 8-10 minutes
Stir in your vegan mayo, lime juice and cilantro
Mix well
Once vegan mayo has started to melt add in paprika and season with salt and peper
Turn off heat
Stir in your vegan feta
Pour mix into serving bowl
Serve with corn tortilla chips
Serve and enjoy!
