Lately I have been obsessing over Corn Elote. So I thought, why not serve my Corn Elote mix on top of nachos. And so glad I did, they are absolutely delicious!
Ingredients
2 cups roasted corn
2 jalapeños diced
1/4 cup vegan Mayo
1/4 cup vegan sour cream, plus more for garnish
1/2 tsp paprika, plus more for garnish
1/2 tsp cumin
7oz vegan cheese shreds
1/3-1/2 cup of vegan feta
Cilantro
Limes
Directions
Preheat oven to 400
In a medium bowl add the first 6 ingredients
Season with salt
Mix well
Place your chips onto baking sheet
Top with your cheese shreds
Add spoonfuls of your corn mix
Bake in preheated oven for 10-15 minutes
Remove
Top with a few sprinkles of paprika
Drizzle with vegan sour cream
Sprinkle with vegan feta and cilantro
Serve with lime wedges
Serve and enjoy
