Cowboy Casserole



A delicious easy to make casserole with creamy vegan grounds, mixed with tomatoes and corn topped with cheese and tater tots!


Ingredients

1/2 onion, diced

12oz vegan ground meat

1 tsp garlic powder

Salt and pepper

1/3 cup vegan cream cheese or vegan sour cream

15.25 oz can of corn, drained

15.25 oz can diced or crushed tomatoes

1 tbsps of dried chives (you can use fresh as well)

7oz vegan cheese shreds (more if you like it extra cheesy)

32 oz of tater tots

Freshly chopped chives for garnish

Vegetable oil



Directions

Heat a little oil in a large pan over medium high heat

Add in your onion

Cook until translucent

Add in your vegan grounds

Crumble and cook until almost browned

Add in your garlic powder and season with salt and pepper

Mix well

Add in your tomatoes and mix well and cook for 2 minutes

Add in your cream cheese and canned corn

Mix well and cook until vegan cream cheese has melted

Turn off heat

Preheat oven to 375

Pour mixture into a greased 9x13 baking pan

Sprinkle generously with vegan cheese

Add your tater tots on top evenly is row s

Bake in preheated oven for 40-45 minutes uncovered

Remove from oven

Garnish with freshly chopped chives

Serve and enjoy!
