Lemon cookies using lemon cake mix. How easy is that. Not only are they easy to make they are absolutely delicious!
Ingredients
15oz vegan friendly lemon boxed cake mix, we used Duncan Hines
1/2 cup vegetable oil
1/4 cup of just egg
2 tbsps lemon juice
1-2 tsps lemon zest
1/4 cup powdered sugar
Flour, if needed
Directions
In a medium bowl add your cake mix, oil, vegan egg, lemon juice and zest
Mix well until creamy, if too wet still, add in flour until thickened (should be a little softer than cookie dough)
Place dough into refrigerator for roughly 20-30 minutes
Preheat oven to 350
Remove dough from fridge
Place powdered sugar into small bowl
Using a spoon or ice cream scoop
Scoop a round ball from dough
Roll into a ball
Then roll the dough ball into your bowl of powdered sugar until fully coated
Place onto prepared baking sheet
Repeat with remaining dough
Bake in preheated oven for roughly 10 minutes
Remove and let cool
Serve and enjoy
