Easy Vegan Apricot Chicken

This is a quick and easy recipe using less than 5 ingredients!

My grandmother used to make us this dish around the Jewish Holidays. The sauce was always drinkable. That’s why I decided to recreate this dish into a Vegan version with very few ingredients!


1 2oz package of Onion soup mix

1 cup of apricot preserves

1-1 1/2 cups of Vegan friendly Catalina Dressing

14-16 oz of vegan chicken

Chopped parsley for garnish


In a medium bowl add the first 3 ingredients

Set aside

In a large frying pan sauté your vegan chicken in a little oil

Toss until heated thoroughly

Add in your sauce

Toss your chicken and sauce well to coat

Allow to cook over medium heat for 5 minutes

Stir often

Cover and cook for 10 minutes

Remove lid

Let sit on low for 5 minutes

Turn off heat and cover until ready to serve

Garnish with chopped parsley
