Easy Veggie Pasta




This is the perfect meal for a busy day. With very little time you can whip up a deliciously fresh pasta!


Ingredients

16oz of pasta of choice

2-3 garlic cloves, minced

2 cups cherry tomatoes

3 cups of steam broccoli stems

8-10 tbsps of Non Dairy Butter

1/3 cup Nutritional Yeast

2 tsps chicken-less broth seasoning

1/2 cup of water

1/4 cup pasta water

Olive Oil

1-2 tsps crushed red pepper

Juice from 1 lemon

Salt and pepper



Directions

Bring a pot of salted water to a boil

Add in pasta and cook, reserve 1/4 cup pasta water

Drain and toss with a little olive oil

In a large pan add a little olive oil and heat to medium

Once oil is warm add in your garlic

Saute for 1-2 minutes

Then add in your tomatoes

Cook for 5-7 minutes turning often

Add in your steamed broccoli

Followed by 8 tbsp of butter

Its ok for the steamed broccoli to start falling apart

Continue to cook until butter has melted and tomatoes start to burst

Season with salt and pepper

Add in your cooked noodles, chicken-less seasoning, water and pasta water

Mix well

Add in nutritional yeast and crushed red pepper

I usually like to add in an additional 1-2 tbsps of butter, but that's optional

Add in your lemon juice, the mix well

Turn off heat and let sit for a bit

Serve with parmesan
