Hash Brown Breakfast Casserole

Delicious casserole where the base/crust is hash browns. Topped with sausage, peppers, onion, cheese and egg. Super easy to make and perfect to serve to a crowd!


6-8 Frozen Hash brown Patties, depending on size of baking pan

14-16oz of prepared vegan breakfast sausage, we used Beyond Meat Sausage crumbled

2 cups of shredded vegan cheese

24oz of Just Vegan Egg

1 red bell pepper, diced

1/2 onion, diced

1 green bell pepper, diced

1/2 cup green onions, diced


Preheat oven to 400

In a medium bowl toss your crumbled vegan sausage with your diced peppers and onions

Set aside

Prepare your baking dish with oil or baking paper

Place your hash brown patties into bottom of dish

Bake in preheated oven for 10-15 minutes

Remove and let cool slightly

Sprinkle top of hash brown with 1/2 of your cheese

Add your sausage and pepper mix

Season with salt and pepper

Pour in your vegan egg mix, enough to go almost to the top

Sprinkle with remaining cheese

Place into oven

Bake in oven for 45-60 minutes until egg is no longer liquid

Remove and let cool 5 minutes

Garnish with green onions

Slice, serve and enjoy!
