Jennifer Aniston Salad

I heard a lot about this salad so I had to give it a try and I’m glad I did! It’s so unique and packed with flavors and textures!


2-3 cups cooked quinoa

1/2 red onion, diced

1 cup diced cucumber

1/2 cup chopped parsley

1/3 cup chopped mint

1 15oz can of garbanzo beans, drained and rinsed

1/4 cup olive oil

1/3 cup lemon juice

Salt and pepper (to taste)

1/2 cup roasted and salted pistachios

1/2 cup crumbled feta


In a large bowl add all ingredients except the feta

Mix well

Gently fold in your feta

Chill for 30 minutes to an hour

Serve and enjoy
