Loaded Sausage Pasta


A delicious loaded sausage pasta with mushrooms, mini peppers, spinach and more. Super easy to make and comes together in less than 30 minutes!


Ingredients

13.5 oz vegan sausage links, we used impossible Italian sausage links

Vegetable oil

3 tbsps vegan butter

8oz mushrooms, sliced

14.5 oz can of diced tomatoes

2 cups mini peppers, cut

1 tbsp crushed garlic

10oz spinach

12oz cooked pasta

7oz vegan mozzarella cheese shreds

1-2 tsps crushed red pepper

Salt and pepper

Parsley for garnish


Directions

Chop your sausage links into bite size pieces

Heat a little oil in a large pan over medium

Add in your sausage

Cook, turning often until browned

Add in your mushrooms

Cook for 3-5 minutes

Add in your peppers and cook for 2-3 more minutes

Add in your garlic and 1 tbsp of vegan butter

Mix well

Add in your canned tomatoes

Season with salt and pepper

Add in your cooked pasta and remaining butter

Mix well

Stir in your spinach

Add in your vegan cheese and mix until melted

Add in your crushed red pepper and mix well

Turn off heat garnish with parsley

Serve and enjoy
