Loaded Vegan Chicken Nachos




Super delicious nachos loaded with so many incredibly tasty flavors, colors and textures.


Ingredients

1 tbsp vegan butter

8oz of Vegan Chicken Chunks

1/2 package of 1oz taco bell taco seasoning package

1/2 cup water

10-12 oz of Vegan Shreds (We used Mexican Blend Shreds)

1 cup of cooked black beans

1 cup of cooked Corn

2 avocados, diced

1-1 1/2 cups of Pico De Gallo

1- 1 1/2 cups of Vegan Sour Cream

1 cup of pickled jalapeno slices

Tortilla Chips





Directions

In a medium sauce pan add you butter and heat to medium-high heat

Once melted add in your vegan chicken

Cook until browned

Add in your taco seasonings and water

Cook until water has evaporated/thickened

Turn off heat

Preheat oven to 375

On a round or rectangle cookie sheet add your tortilla chips

Sprinkle generously with cheese*

Top with your vegan chicken, corn and beans

Place into pre heated oven and cook until cheese has melted, roughly 20 minutes

Remove

Top with your pickled jalapenos, pico de gallo, avocado and sour cream

Serve and enjoy!






*If you want you can layer your chips and cheese
