I’ve teamed up again with one of my favorites @theverygoodbutchers to make these Meatball Bread Bowls for #NationalMeatballDay using their delicious MMM Meatballs.

(Makes 4 bread bowls)
Ingredients
1 14oz package of Very Good Butchers MMM Meatballs
1/2 onion, diced
1 tbsp crushed garlic
1 tbsp tomato paste
1 tbsp Italian seasonings
14oz can of crushed tomatoes
2 cups of veggie broth
1 cup of unsweetened non dairy milk
Salt and Pepper
Roughly 1 tsp crushed red pepper, or more if you like it on the spicy side
10oz of Vegan Mozzarella Shreds
1/4 cup Nutritional yeast
Basil
4 small sized Bread Boule
Directions
In a non stick pan heat a little oil to medium high heat
Add in your meatballs
Cook until golden on all sides, roughly 10 minutes
Remove from pan
Return pan to heat, don't clean the pan
Add more oil if needed
Add in your onion and sauté for 5 minutes
Add in your garlic and cook for another 1-2 minutes
Then add in your tomato paste and Italian seasoning
Mix well
Stir in your crushed tomatoes
Slowly add in your veg broth followed by milk
Season generously with salt and pepper
Cook for 10 minutes stirring often
Add in your crushed red pepper
Stir in your cheese and nutritional yeast
Cook until melted (if too thick add in more broth)
Turn off heat
Preheat oven to 425
Cut out your bread boule to form a bowl, use the bread for dipping later or use in another dish
Pour liquid mix into bread bowls
Add in 3 meatballs to each bowl
Sprinkle tops with remaining cheese shreds
Place into preheated oven for roughly 10-15 minutes until cheese is melted and bubbly
Remove from oven and top with fresh basil
Serve and enjoy!
