Mini Meatloaves

Is there anything more comforting than Meatloaf? We took our original Ma' the Meatloaf recipe and made 8 mini meatloaves. These are perfect because everyones gets there own little loaf.


Ingredients

1 rounded cup of ketchup

2 tbsp yellow mustard

¼ cup of brown sugar

16oz of uncooked vegan ground meat

1 cup of diced onion

1/2 -3/4 cup of bread crumbs

1/3 cup vegan egg replacer

1 cup vegan shredded cheddar cheese

2 tbsp of nutritional yeast

1/2 cup non dairy milk

½ tsp salt

½ tsp pepper

Oil

Mini Loaf Pan





Directions

Preheat oven to 375

In a small/medium bowl combine the first 3 ingredients

Mix until fully combined

In a large bowl add your vegan ground meat, onion, breadcrumbs, egg replacer, cheese, nutritional yeast, milk, salt and pepper

Mix well, I suggest using your hands if your not using a stand mixer

Add in 1-2 tbsp of your ketchup sauce

Mix well

Spray your loaf pan generously with oil

Add your meatloaf mix evenly to your mini loaf pan

Spread remaining ketchup sauce on top of each loaf

Bake in preheated oven for roughly 45 minutes

Remove from oven

Let cool for 5 minutes

Carefully remove loaves from pan

Serve and enjoy!
