Mini Taco Monkey Bread

Today we are making taco flavored mini monkey bread. They are muffins filled with everything taco, using vegan friendly biscuit dough.


1 can of vegan friendly biscuit dough, 8 biscuits

12oz vegan ground meat

1/2 onion, diced

1/2 red bell pepper, diced

1 jalapeno, diced

1, 1oz packet of taco seasoning

1/4 cup of taco hot sauce, or enchilada sauce

1/4 cup water

1/2 cup of vegan white cheese shreds

2 cups of vegan yellow cheese shreds

Pico de gallo

Vegan Sour cream

Vegetable oil


Heat a large frying pan to medium

Add in a little oil

Add in your onion and cook for 2-3 minutes

Add in your bell pepper and jalapeno

Cook for 2 minutes

Add in your vegan grounds

Cook and crumble until starting to brown

Add in your taco seasoning, taco sauce and water

Mix well

Cook for 3-5 minutes

Stir in your white cheese shreds

Mix well until cheese is melted

Turn off heat

Let cool

Preheat oven to 375

Cut your biscuits into small pieces

Place into a large bowl

Add in your taco meat and remaining cheese

Mix well

Grease a large muffin pan

Fill each muffin pan with a generous amount of biscuit mix

Bake in preheated oven for 35-45 minutes

Remove from oven and let cool

Carefully remove muffins from pan

Top with vegan sour cream and pico de gallo

Serve and enjoy!
