No Bake Peanut Butter Cup Cheesecake




Such a deliciously rich cheesecake, that requires no baking! Just mix and refrigerate. We made our own crust with Oreos but you can always use a premade crust to make it that much easier!


Ingredients

36 Oreos, we used Chocolate Peanut Butter Pie

1/2 cup Vegan Butter, melted

8oz vegan cream cheese

1/2 cup sugar

1 tsp vanilla

1/3 cup of peanut butter

80z vegan whipped cream, roughly 3 cups (We used So Delicious Frozen Dairy Free Original CocoWhip)

1 cup of chopped peanut butter cups, plus another 1/2 for garnish (We used Unreal Dark Chocolate)

Chocolate Syrup (We used Hershey's chocolate syrup that is accidentally vegan)





Directions

Add your Oreos to a food processer and process until you have crumbs

Mix in your butter

Press mixture into the bottom of a greased 9 inch spring pan

Refrigerate until ready to use

In a stand mixer add your vegan cream cheese, sugar, vanilla and peanut butter

Mix until creamy

Fold in your whipped cream

Then stir in your peanut butter cups

Pour into spring pan

Spread top evenly

Sprinkle with remaining peanut butter cups

Drizzle with chocolate syrup

Refrigerate for at least 4 hours

Once firm Remove from fridge

Remove spring and cut into slices

Refrigerate any leftovers immediately
