Oatmeal Cookie Sandwich




These Oatmeal cookies are delicious on their own but making a sandwich with Biscoff spread and marshmallow makes them that much more delicious!


Ingredients

1 cup of butter, softened slightly

1 cup packed brown sugar

1/2 cup white sugar

1/2 tsp baking soda

1/2 tsp salt

1 1/2 cups all-purpose flour

1 tsp ground cinnamon

Splash of vanilla

3 cups old fashioned roll oats

1/2 cup of Vegan Egg, we used Just Egg

1/2 tsp baking soda

1/2 tsp salt

Biscoff cookie spread

Vegan Marshmallow Cream, we used Smuckers Marshmallow Topping





Directions

Preheat oven to 350

In a medium bowl combine the first 5 ingredients

Blend until creamy, using a hand mixer

Add in vanilla and egg

Blend until mixed

Slowly add in your flour and mix until creamy

Fold in your oats

Scoop roughly 1/4-1/3 cup onto prepared baking sheet

Bake in preheated oven until golden, roughly 20-25 minutes

Remove from oven and cool

Prepare sandwiches

Start with cool cookies

Spread bottom of one side with marshmallow topping

Spread bottom of another cookie with cookie spread

Place cookies together to form sandwich

Repeat with remaining cookies

Place in refrigerator for 10 minutes before serving
