One Pot Pasta Primavera

A delicious hearty pasta cooked together in one pot. This meal comes together in just under 30 minutes. Perfect for a weeknight feel good meal.



Ingredients

12oz of broccoli florets

8oz of mushrooms, sliced

10oz of cherry tomatoes

1/2 onion diced

2 tbsp of crushed garlic

2 tbsp vegan butter

12oz of short pasta

4 cups of vegetable stock

1 tsp crushed red pepper

Salt and pepper

8oz of vegan cream cheese

1/2-1 cup of shredded vegan parmesan

1/4 cup of nutritional yeast

1-2 cups of prepared vegan chicken pieces (optional)





Directions

In a large Dutch oven add the first 7 ingredients

Pour in your vegetable stock, enough to cover ingredients

Mix well

Season with salt and pepper

Stir in your crushed red pepper

Cover and cook for 15-20 minutes, stirring once or twice

Remove lid, pasta should be tender, if not cook until tender

Add in your vegan chicken if using

Mix well

Add your vegan cream cheese, parmesan and nutritional yeast

Mix well

Cook until cheese has melted

Turn off heat

Let sit 5 minutes before serving

Serve and enjoy!
