Orzo Salad With Feta

With very few ingredients and very little time and you have yourself a simple, refreshing and outstanding salad. Fresh ingredients make this salad the perfect summer dish.


16oz of Orzo, cooked according to directions and drained

Juice from 3-4 Lemons

Zest from 1 of the lemons

1/4 cup of olive oil, or more

1 cup of cherry tomatoes, sliced

3-4 persian cucumbers, chopped (roughly 2 cups)

1 tbsp of freshly chopped mint

Salt and pepper

Lemon pepper, optional

1 package of Follow Your Heart Feta


Once your orzo has been cooked, drained and cool for a few minutes

Place into a large bowl

Add in your olive oil

Toss gently to coat

Add in your tomatoes, cucumber, mint, lemon juice and lemon zest

Mix well Season with salt and pepper, as well as lemon pepper if using

Mix well

If too dry add in a little more olive oil

Add in your feta

Gently toss

Place into refrigerator to cool and marinade for at least 1 hour

Serve and enjoy!
