Delicious Reuben flavors wrapped in a vegan friendly egg roll wrapper. These can be baked or air fried!
Ingredients
Vegan friendly egg roll wrappers
Vegan shredded mozzarella
Sauerkraut
Vegan corned beef, we used Unreal Deli or you can use my recipe here
Oil
Water
Vegan thousand island (mix 1 cup vegan Mayo, 1/3 cup ketchup, 1/4 cup relish, 2 tbsp chopped onion, splash of hot sauce)
Directions
Chop your vegan corned beef into small pieces
Place your egg roll wrapper onto working surface
To the center add cheese, vegan corned beef and sauerkraut
Roll up egg roll
Place onto air fryer basket or baking sheet
Repeat with remaining egg rolls
Brush each side with oil
Air fry at 360 for roughly 15-20 minutes turning halfway through
Done when golden
(Bake at 425 for 10-15 minutes until golden)
