Sausage Breakfast Cups



Delicious breakfast using vegan sausage to form cup muffin cup, filled with veggies, vegan cheese and Vegan egg. Perfect meal for anyone on the go.



Ingredients

28oz of vegan sausage, we used impossible

1 cup cherry tomatoes sliced

1 cup chopped spinach

1-2 cups shredded vegan cheese

1-2 cups of vegan liquid egg, we used just vegan egg

Salt and pepper

6 large muffin pan



Directions

Preheat oven to 350

Take a small amount of sausage

Form into disc

Press into greased muffin pan to form cups

Repeat to fill up muffin pan

Add a little cheese to each sausage cup

Sprinkle half with tomatoes

And sprinkle other half with spinach

Pour your vegan egg on top

Season each with salt and pepper

Sprinkle each with more cheese

Bake in preheated oven for 35-45 minutes until egg is set

Remove once egg is set

Let cool 5 minutes

Carefull remove from pan

Serve and enjoy
