A vegan version of a delicious sheet pan chicken dinner with Greek inspired flavors. Vegetables and vegan chicken seasoned and cooked on one sheet, then topped with vegan feta!
Ingredients
1/3 cup olive oil
1/4 cup lemon juice
2-3 garlic cloves, minced
1 tbsp Italian seasoning
2 tbsps dijon mustard
Salt and pepper
8oz vegan chicken, uncooked
1 zucchini, chopped
1 orange bell pepper, chopped
1-2 cups cherry tomatoes
1/2 red onion, roughly chopped
2 lbs of small potatoes
1 cup of pitted olives of choice
Freshly chopped parsley
Vegan crumbled feta, we used Follow Your Heart
Directions
Preheat oven to 375
In a small/medium bowl add the first 5 ingredients
Season with salt and pepper
Mix well
Onto a baking sheet add your zucchini, pepper, tomatoes, onion, potatoes and vegan chicken
Mix well and evenly spread onto sheet
Drizzle with your sauce
Bake in preheated oven for 30-35 minutes
Remove and add your olives and sprinkle with vegan feta
Return to oven for 5-10 minutes
Remove and garnish with parsley
Serve each plate with a sprinkle of vegan feta and parsley
Serve and enjoy!
