Sloppy Joe Potato Skins




Making Sloppy Joe Mix and stuffing them inside crispy potato skins. Absolutely delicious!

Ingredients

1/2 onions diced

12oz vegan ground meat

Salt and pepper

1 tsp garlic powder

1 tsp chili powder

1 tsp vegan Worcestershire sauce

1/4 cup ketchup

2 Tbsp mustard

1/4 cup of brown sugar

1 cup vegan white cheese shreds

1 cup vegan yellow cheese shreds

Roughly 4-6 potatoes washed

Vegetable oil



Directions

Preheat oven to 400

Place potatoes onto a baking sheet

Pierce potatoes with a fork

Brush with oil and season with salt

Bake for roughly 1 hour

While potatoes are cooking make the filling

Heat a large non stick pan over medium

Add in a little oil

Once hot add in your onion

Cook for 5 minutes

Add in your vegan grounds

Crumble and cook until starting to brown

Season with salt and pepper

Add in your garlic powder, cumin, Worcestershire, ketchup mustard and brown sugar

Cook for 5 minutes

Add in you cheeses

Cook until melted

Turn off heat

Remove potatoes once cooked

Cut potatoes in half and remove potato meat, reserve for another recipes

Brush potato skins with oil and season with salt

Place back into oven for 10 minutes

Remove from oven

Stuff each potato skin with meat mix

Place back into oven for roughly 15-20 minutes

Remove from oven and garnish with green onions

Serve and enjoy
