Strawberry Cheesecake Muffins



A delicious refreshing muffin using accidentally vegan cake mix. They come together so easy that even if you're not a great baker these will turn out delicious!

Ingredients

4-6 tbsps vegan butter, melted

1/2 cup of brown sugar

1/2 cup flour

8oz vegan cream cheese

3/4 cup plus 1 tbsps just vegan egg

1/3 cup of sugar

1 15.25 oz vegan friendly lemon or vanilla box cake mix, we used Duncan Hines Lemon Supreme

1 cup water

1/3 cup vegetable oil

2-3 cups of chopped strawberries


Directions

Preheat oven to 350

In a small bowl add your brown sugar and melted butter

Mix

Add in your flour and fork until crumble are made

(If too thick add in more butter, if too thin add in more flour)

Set aside

In a medium bowl add your vegan cream cheese

Add in 1 tbsps vegan egg and 1/3 cup sugar

Beat until creamy

Set aside

In a large bowl add your box cake mix

Add in 3/4 cup just vegan egg, 1 cup water and 1/3 cup of vegetable oil

Beat until creamy

Add in your strawberries and mix well

Spray your muffin pan with cooking spray

Add in a little of your cake mix, to fill 1/4-1/3 of muffin

Top with a spoonful of cream cheese mix

Add remaining cake mix on-top

Top each muffin with your crumble

Bake in preheated oven until golden

Roughly 20-25 mins, some ovens/pans may need longer

Remove when golden

Let sit for 10 minutes before removing from pan

Serve and enjoy!
