Tater Tot Breakfast Muffins


The most delicious breakfast ingredients together in one perfect muffin. Packed with flavor, and SO EASY to make.


Ingredients

Roughly 32 oz bag of Frozen Tater Tots

2 12oz bottles of Just Vegan Egg

Roughly 3 cups of Vegan Cheddar Cheese Shreds

2 cups of ground vegan breakfast sausage, cooked ( I used Beyond Meat breakfast patties and links)

Salt and pepper



Directions

Preheat oven to 350

Grease your muffin pan

Place 4 tater tots in each muffin pan

Place in preheated oven and bake for 10-15 minutes

Remove from oven

In a medium-large bowl add your Cooked Vegan Sausage, 2 cups of Cheese Shred and both Just Egg bottles

Season with salt and pepper

Mix well

Pour mix on-top of tater tots in muffin pan

Sprinkle with remaining cheese shreds

Add 4 tater tops to each muffin

Bake in preheated oven for roughly 35-45 minutes until egg is set

Remove from oven

Let cool 5 minutes

Remove from pan, serve and enjoy!
