Hands down this is the best vegan egg salad I've had. We are using extra firm tofu prepared two different ways and combining them with the perfect flavors and crunch!
Ingredients
16oz extra firm tofu, drained and pressed
3 tbsps nutritional yeast
1/3 cup vegan Mayo
2 tbsps mustard
1/3 cup relish
1/2 small onion, diced
3/4 cup chopped celery
Salt and pepper
Pinch of black salt
1/3 cup green onions
Directions
Cut your tofu into small/tiny pieces
Take 1/3 of you chopped tofu and place into small bowl
Add nutritional yeast
Mash until blended and crumbly
In a large bowl add you vegan Mayo, Mustard, relish, onion and celery
Mix well
Add in remaining tofu pieces and mashed tofu
Mix well
Season with salt and pepper
Add in your black salt
Mix well
Add in you green onions
Mix well
Refrigerate for at least one hour, the longer the better
Remove and serve as is or in sandwiches!
