The Best Vegan Scrambled Eggs





Just a simple scramble But THE BEST scramble you'll ever have. The combination of the scrambled eggs, sautéed vegetables and cheese, it is the closest dish I have had to what I can remember getting at the local diner or hotels when on vacation. Brings back so many heart warming memories.


Ingredients

2 12oz Just Vegan Egg Containers

12 oz of mushrooms, sliced

10 oz of baby spinach leaves

Salt and Pepper

10-12oz of shredded cheese (Basically a bag and a half. We used 1 1/2 packages of So Delicious cheddar jack)

1 tbsp of butter

Olive oil



Directions

In a large frying pan add your butter

Melt over medium high heat

Add in your mushrooms

Cook for 10 minutes

Drain, season with salt and pepper

Remove from pan

Return pan to heat

Add a little olive oil

Add in your spinach cover and cook until spinach is wilted

Drain really well and remove from pan

Add a little oil and return pan to medium high heat

Add in your Just egg

Scramble until thickened like scrambled eggs, scraping from pan every few minutes

Should take about 8-10 minutes

Add in your sautéed and drained vegetables

Mix well

Add in your cheese shreds

Mix until melted and super cheesy

Season with salt and pepper

Serve and enjoy!
