Twice Baked Breakfast Potatoes



The most delicious breakfast inspired twice baked potatoes! No explanation needed. 


Ingredients

4-6 potatoes cooked

1/3 cup semi melted vegan butter

2 tbsps vegan sour cream

Salt and pepper

1 rounded cup scrambled vegan eggs

8oz cooked crumbled vegan sausage 

1 cup vegan cheese shreds

Chopped chives


Directions

Preheat oven to 350

Slice potatoes in half lengthwise 

Use a spoon and remove inside potato leaving skins

Place potato meat into large bowl

Add in your butter and sour cream

Season with salt and pepper

Mix well until creamy  

Folds in your vegan eggs, sausage and cheese 

Place potato skins into baking dish

Fill each skin generously with potato egg mix

Bake in preheated oven for 10-15 minutes

Remove once cheese is melted

Garnish with chives

Serve and enjoy!
