Everyone loves a good sweet potato casserole and today we’re making something similar but making individual sized twice bake sweet potatoes!
Ingredients
4-5 sweet potatoes, cooked
2 tbsps vegan butter
1/4 cup vegan cream cheese
1/4 cup of brown sugar
Vegan mini marshmallows
Directions
Preheat oven to 425
Cut your cooked potatoes in half
Scoop out the inside and place into a bowl
Place potato skins onto a baking sheet
Repeat with remaining potatoes
To your bowl of potato mix, add you vegan butter, cream cheese and brown sugar
Mash until creamy and blended
Fill your potato skins with you potato mix
Top each with mini marshmallows
Bake in preheated oven for 15 minutes until marshmallows are starting to brown and bubble up
Remove from oven, serve and enjoy!
