Fried Chicken-less Biscuit


Southern at it's finest. These bad boys will turn any frown upside down! (Updated recipe)

Sandwiches:

Biscuits, cut/pulled in half, recipe below

Fried Chicken-less Patties, recipe below

Sweet Butter, recipe below

Deli Pickle slices

Sweet butter directions:

In a small/medium bowl mix together the following

1/2 cup of semi softened butter

2 tablespoons of Maple Syrup

1 teaspoon of salt

BISCUITS

Biscuit Ingredients:

2 cups flour

3/4 cup Vegan Buttermilk, cold (here is one way to make it)

1/2 cup earth balance shortening, cold

3 tablespoons of earth balance butter, cold

3 teaspoons of sugar

1 teaspoon of salt

1 tablespoon of baking powder

Biscuit Directions:

Preheat oven to 425

Mix flour, salt, sugar and baking powder

Add in shortening 1/2 tablespoon at a time.

Mix with fork until it turns into crumble

Add in your butter and mix with fork

Stir in milk, until dough forms, pulling away from bowl

Place onto floured surface and roll out into roughly 1/2 inch thick

Cut into mini biscuit sizes

Bake in preheated oven for 10 minutes until golden

FRIED CHICKEN-LESS CHICKEN

Fried 'Chicken' Ingredients:

1 package Gardein Chicken Scallopini, thawed (You can use other Chicken substitutes)

1/2 cup of plant based milk

2 tsp of apple cider vinegar

1/3 rounded cup of flour

1/4 rounded cup of cornstarch

Flour seasoning: 1 rounded teaspoon of salt, 1/2 tsp garlic powder, 1/2 tsp onion powder, pinch of paprika

Oil for frying

Fried 'Chicken' Directions:

In a small medium flat bowl mix your non dairy milk and apple cider vinegar, let sit 5 minutes

In a second small/medium flat bowl mix together your flour, cornstarch and seasonings

Cut your thawed chicken cutlets in half

Place one on top of the other and firmly form into patties the size of your biscuit

Place your patties in the milk mix, then press firmly into flour mix

If you want a double batter, repeat

Place patties on cooling rack, let sit for 5 minutes before frying

Heat roughly 1/3-1/2 cup of oil in a medium frying pan over medium high heat

Place your floured patties into hot oil

Fry on each side for 3-5 minutes until golden crispy

Remove from oil and drain on paper towel.

Repeat adding more oil if necessary

Create your Sandwiches

Spread a generous amount of your sweet butter in your bottom biscuit

Top with Fried 'Chicken'

Drizzle with a generous mount of more sweet butter

Top with two pickles followed by your top biscuit
