Ratatouille, a traditional French Provençal stewed vegetable dish that will change anyones mind about not liking Veggies.
Ingredients:
1 onion, diced
1 eggplant, diced
1 orange bell pepper, diced
4 garlic cloves, minced
1 bunch of parsley, chopped
1 zucchini, diced
1 yellow squash, diced
2 large tomatoes, diced
1 tablespoon of dried basil
1-2 tablespoons of olive oil
1 heaping teaspoon garlic salt
Black Pepper
Directions:
In a large frying pan heat your oil over medium high heat
Add in your onions and eggplant
Cook, stirring often for 7 minutes
Add in remaining ingredients and cook for an additional 7 -10 minutes
Season with salt and pepper
