Hearty Cuban Sandwich


Say hello to your new favorite Cuban Sandwich!

This makes roughly 4 sandwiches

Ingredients:

2 tbl Earth Balance Butter

1 beefless cube

½ cup water

2 garlic cloves crushed

1 tsp garlic salt

2 tsp cumin

1 tsp of oregano

Juice from 1 lemon

2 cans of Jackruit (in water), drained

2 packages of Lightlife Ham ( or you can use tofurky if you can't find lightlife)

8-10 slices of Follow Your Heart Mozzarella or Provolone Cheese

Mustard

Pickles

4 Cuban Bread Rolls or soft French rolls

Additional butter for the bread

Directions:

Combine the first 8 ingredients into a crock pot

Mix well

Add in your jackfruit

Cook on high (for my crock-pot it was 4 hours)

Check on it in 15 minutes when the butter has melted to make sure it’s mixed together

Flip jackfruit halfway, add more water if too dry

When done remove from crock-pot

Preheat oven to 425

Using a solid spatula carefully press down each triangle to flatten, try to keep in one piece

Place onto a greased cookie sheet

Use remaining juice in crockpot and spoon onto jackfruit

Bake in preheat oven for 15-20 minutes turning halfway

Remove and slightly cool

Prepare your sandwiches:

Butter outside of the tops and bottoms of your bread

Spread the insides of top and bottoms with a generous amount of mustard

Start with bottom bun and add in this order:

Cheese, deli slices, jackfruit, pickles more cheese top bun

Place into preheated panini press

Press down for 3-5 minutes until golden and cheese has began t melt

(panini presses may vary so watch carefully)

You might have to throw it in the microwave or oven to get that final cheese to melt

Repeat with remaining ingredients
