Stuffed Acorn Squash Rings

There's something about Squash in the Fall and Winter time that makes you feel complete comfort. This dish falls in that category.

Not only is it super cute to plate, it tastes amazing!!!


2 acorn squash, sliced

1 light life veggie sausage

2 cups of fresh baby spinach

1 package of Green Giant Riced Veggies

1 tbl nutritional yeast

½ tsp paprika

Salt and Pepper

¼ cup of Follow Your heart Parmesan

1 tbl softened butter

1/3 cup of panko bread crumbs


Preheat oven to 375

In a large frying pan add a little oil and heat over medium high heat

Add in your lightlife sausage

Cook and crumble until browned, roughly 5-7 minutes

Add in your spinach and toss until starting to wilt

Season with salt and pepper

Remove from pan

Return pan to heat and add in your riced veggies

Heat for 2-3 minutes

Add in your paprika, nutritional yeast and season with salt and pepper

Return your sausage spinach mix to the veggies

Mix well

Turn off heat

In a small bowl using your hands and spoons mix together your butter, panko, and parmesan

Mix to form into a paste dough consistency

Place your acorn squash onto a prepared baking sheet

Season with a little oil and salt

Take a large spoonful of your sausage veggie mix and fill in each ring generously

Then take your cheese paste mix and press on top of each stuffed ring

Bake in preheated oven for roughly 30 minutes

Remove from oven

Serve and enjoy!
