Loaded Fall Grilled Cheese

Your Fall favorite veggies and flavors inside of a perfectly grilled cheese.

The star of this dish is the Marinated Tofu. Using high quality ingredients is important when creating star dishes. And thats why we chose to use Nasoya Organic Tofu. Now lets get started!


12 oz of Brussels Sprouts, shaved or roughly chopped

2 shallots sliced

Nasoya Extra Firm Tofu (14oz) that has been Marinated, recipe below

2 cups of cooked butternut squash

2-4 tbl of butter

Salt and pepper

Follow Your Heart Smoked Gouda

Thick Sliced Bread


Preheat oven to 400

Toss your sprouts and shallots with a little oil

Place onto prepared baking sheet

Season with a little course salt

Bake in preheated oven for 20 minutes until starting to brown

Remove and set aside

Mash your cooked squash and mix with butter

Season with a little salt and pepper, set aside

Heat a non stick skillet over medium high heat

Remove marinated tofu and place into heated pan

Bake on each side, pressing down as you cook, careful not to break it apart

Cook on each side for roughly 5-7 minutes until golden and crispy

Remove from pan and clean pan

In same pan place down your bread slice, heat on medium/high

Top with 1 to 2 slices of cheese

Spread second slice of bread with a generous amount of butternut squash mash

Place down, squash side up, into pan

Top your cheese slice with tofu, crispy sprouts, and drizzle with balsamic glaze

When bread is golden carefully flip the butternut squash slice ontop of the loaded cheese slice of bread

Remove from pan and repeat

Serve and enjoy!

Tofu marinade

1/4 cup soy sauce

2 tsp of liquid smoke

2 tbl of maple syrup

1/2 tsp garlic powder

1 block of tofu, drained and pressed (and chopped into four slices)

Whisk together ingredients

Place your tofu into the marinade

Flipping a few times to fully coat

Cover and refrigerate for at least 6 hours (We did overnight)
