Saw this go viral on TikTok and knew I had to give it a try and make a vegan version. You basically throw a few ingredients into a casserole dish, bake and then add cooked pasta. That's it. I also added in asparagus. This pasta is definitely now on my go to list. Its so simple and yet so delicious!
Ingredients
7-8oz block of Vegan Feta
1 1/2 cups of cherry tomatoes
1 bunch of asparagus, chopped
3-4 garlic cloves minced
1/4 cup of olive oil plus 1 tbsp
1 tsp of salt
1 tsp of italian seasoning
1/4 cup of Vegan Feta Crumbles
1/4 cup of nutritional yeast
12-14oz of cooked pasta
1-2 tbps freshly chopped basil
Directions
Preheat oven to 400
In a casserole dish add your tomatoes and asparagus
Add in your garlic, olive oil, salt and Italian seasonings
Mix well
Place your feta block in the center of you dish
Drizzle with remaining tbsp of olive oil
Bake in preheated oven for 25-30 minutes until cheese has melted
Remove from oven and add in your feta crumbles, nutritional yeast and basil
Add in your cooked noodles and carefully mix until blended well
Season with salt and pepper
Serve and enjoy!
