Ingredients
1/2 cup vegan yogurt
2 tbsps Dijon mustard
2 tbsps maple syrup
1/3-1/2 cup fresh dill
Salt and garlic pepper
2-15oz can chickpeas, rinsed and drained
1/2-1 red onion, diced
1-2 cups chopped cucumber
Directions
Combine the first 3 ingredients
Season with salt and pepper
Mix well
Add remaining ingredients
Toss to coat
Marinate in refrigerator for 30 minutes
Serve and enjoy!
