I grew up on Cabbage Rolls. They are steamed cabbage leaves stuffed with ground meat, rice and cheese and baked in a delicious homemade tomato sauce.
Ingredients
1/2 onion diced, plus 1/4 cup of onion diced
2 tbsp crushed garlic, plus 1 tbsp crushed garlic
14.5oz of diced tomatoes
14.5oz tomato sauce
1 tbp sugar
1 tsp salt
10-12oz vegan meatballs or vegan ground meat
1 cup cooked rice
1 cup vegan mozzarella shreds
Olive oil
Directions
Heat a little oil in a large pan to medium
Add in your 1/2 onion and sauté for 5 minutes
Add in 3 tbsps of garlic and cook for another 2-3 minutes
Add in your tomatoes and tomato sauce
Stir in your sugar and salt
Cook for 15 minutes stirring often
Heat a large pot of water
Once boiling add in your cabbage
Cook for 3-5 minutes
Remove from water and cool to touch
Preheat oven to 350
In a large bowl add your meatballs, rice, cheese, remaining onion and garlic
Add in roughly 1/2 cup of your prepared sauce
Mix well
Remove leaves from cabbage
Cut out any large/thick pieces of the cabbage stem on leaf
Place a spoonful of your meat and cheese mix onto the leaf
Fold in the sides and roll the cabbage tightly
Repeat with remaining cabbage and meat mix
Pour a little tomato sauce into a casserole dish to cover bottom
Place your stuffed cabbage rolls into the dish
Top with remaining sauce
Cover and cook for 1 hour-1 hr and 15 minutes
Remove from oven
Garnish with parsley leaves
Serve and enjoy!
