Easy Vegan Sopes



I really love a good Sope. And what is so great about Sopes, is that they're actually very easy to make. They are so versatile and you can dress it up numerous ways. Today we are keeping it simple but packed with flavor. Using Plant Ranch Foods Pollo Asada, vegan refried beans, Salsa Verde, Vegan Feta and cilantro.


Ingredients

2 cups of instant masa

1 1/2 cups of water

1 tsp salt

1/4 cup of vegan shortening, melted

Plant Ranch Foods Pollo Asada, prepared (we like to pan fry in oil until heated and browned)

Green salsa, we used 505 salsa verde

Follow your heart ground feta

Vegan refried beans

Fresh Cilantro, chopped

Vegetable oil and a little vegan shortening for frying



Directions

In a medium bowl combine the first 4 ingredients

Mix together until dough forms

Using wet hands grab a little handful and roll into ball

Using wet hands continue to form and mold ball into disk/circle

Heat oil/shortening a large frying pan

Once disks are formed place into hot oil

Fry on each side for 2-3 minutes until golden

Remove with tongs and drain on paper towel

Build sopes

Spread your beans ontop

Then spoon a generous amount of plant ranch Pollo on top

Drizzle with salsa

Sprinkle with feta

Garnish with cilantro

Serve and enjoy!
