Green Goddess Chicken Salad



A fresh take on chicken salad using the infamous green goddess dressing.

Ingredients 3/4 cup vegan Mayo 3/4 cup vegan sour cream 1 cup of fresh parsley 1/4 cup of green onions 2 tbsp lemon juice 1 garlic clove (optional) Salt and pepper 8oz vegan chicken 1/2 red onion diced 1 cup of diced celery Bread, tomato, sprouts or any other sandwich toppings



Directions In a blender or magic bullet add the first 5/6 ingredients (6 if using garlic) Add in a pinch of salt and pepper Blend until creamy In a medium bowl add your vegan chicken, onion and celery Pour in dressing Mix well Marinate in refrigerator for 1 hr Serve and enjoy We made ours into a sandwich with bread, tomatoes and sprout
