Taking simple Mashed Potatoes, adding vegan bacon and cheese and wrapping them up in an egg roll and air frying to perfection.
Ingredients
1/3 cup of vegan friendly ranch (We used Follow Your Heart)
1/4 cup of BBQ Sauce (We used Kinders BBQ)
Roughly 1-2 cups of prepared Mashed Potatoes, cooled
1-2 cups of shredded Vegan yellow cheese
1/2 cup of vegan bacon bits or vegan bacon pieces ( A lot of bacon bits on the market are accidently vegan)
1/3 cup of chopped chives
Vegetable Oil
8-10 Vegan Friendly Egg Roll Wrappers (Twin Dragon Egg Rolls are Vegan certified)
Directions
In a small bowl add the first two ingredients
Mix well
Refrigerate until ready to use
Add your chopped chives to your mashed potatoes, mix well (important to make sure your using cooled mashed potatoes)
Place your egg roll wrapper onto working space
In the center add two spoonful's of your mashed potatoes and chives
Add a few sprinkles of shredded cheese
Top with a few sprinkles of vegan bacon pieces
Carefully roll up your egg roll
Place into air fryer basket
Repeat with remaining egg rolls
Brush generously with vegetable oil
Place into air fryer
Heat air fryer to 390-400
Cook for 5-6 minutes
Flip and cook for an additional 5-6 minutes
Until golden
Remove from air fryer
Serve with BBQ Ranch
