Mushroom and Asparagus Orzotto




Orzotto, similar to risotto but using Orzo and done in half the time. This dish is the perfect weeknight feel good meal.


Ingredients

16oz of orzo

12oz mushrooms sliced

1 bunch of asparagus chopped

2 tbsp crushed garlic

Roughly 4 cups of water

2 beef-less cubes

1/2 tbsp white miso paste

6oz of vegan cream cheese

1/2 cup vegan butter

1/3 cup of nutritional yeast

Salt and Pepper

Juice from one lemon

Olive oil





Directions

In a large frying pan add a little olive oil and heat to medium high

Add in your mushrooms

Sauté for roughly 5 minutes

Add in your garlic and asparagus

Cook for an additional 3-4 minutes

Season with Salt and Pepper

Remove from pan and set aside

Return pan to heat

Add in your your orzo

Cook in pan f0r 1-2 minutes

Add in your water and beef-less cubes

Mix well

Stir in your miso paste

Cook stirring often until orzo is soft and most all liquid is gone

Add in more water if orzo isn't cooked

Should take between 18-20 minutes

When orzo is soft and liquid is gone return your mushroom and asparagus mix

Then add in your butter

Cook until butter is melted

Then add in your vegan cream cheese

Cook until cream cheese has melted

Then stir in your nutritional yeast and season with pepper

Mix well

Add in your lemon juice and mix well

Serve and enjoy!
