An easy and delicious pasta, with spinach and tomatoes, put together in one pot and made in under 30 minutes!
Ingredients
1/2 onion, diced
2 tbsp crushed garlic
1 tbsp Italian Seasoning
1 tsp Crushed red pepper
14.5 oz can of diced tomatoes
2-3 cups of vegan broth of choice
8-10oz of spaghetti noodles
10oz spinach
Salt and Pepper
1 tbps vegan butter
2 tbsp nutritional yeast
1 cup chopped cherry tomatoes
1-2 tbsp olive oil
Directions
Heat a large stock pot to medium
Add in your olive oil
Once hot add in your onion and garlic
Cook for 3-5 minutes
Stir in your Italian Seasonings
Add in your tomatoes, 2 cups of broth and crushed red pepper
Bring to a boil
Add in your spaghetti, liquid should cover spaghetti, if not add in more broth
Cook until pasta is done
Add in your Spinach, a handful at a time
Then add in your butter and tomatoes
Mix well
Season with salt and pepper
Add in nutritional yeast
Turn off heat
Mix well
Plate and enjoy!
