Delicious crispy potatoes covered in vegan butter and Parmesan! Might just be your new favorite way to enjoy potatoes! Ingredients 1 tsp garlic powder 2 tsps Italian seasonings 1 tsps garlic salt 2-3 tbsps vegan Parmesan 12 baby Yukon gold potatoes 1/3 cup melted vegan butter plus 1 tbsps 1/3 cup vegan grated Parmesan Directions Preheat oven to 400 Spread 1 tbsps of melted butter into the bottom of a 9x13 baking dish In a medium/large bowl add the first 4 ingredients Add in 1/3 cup melted butter Mix well Cut the potatoes in half Score them by making diagonal slits along the inside pieces, without cutting all the way though. Turn the potatoes, and make diagonal slits the other way crossing over the first slices Add potatoes to seasoned butter mix Mix well until fully coated Place remaining Parmesan into a small shallow bowl Dip each potato, cut side down into the Parmesan to coat Place Parmesan/cut side down into baking dish Repeat with remaining potatoes Bake in preheated oven for 30-40 minutes until golden Remove and let cool 5 minutes Serve and enjoy!
