Roasted Vegetable and Tahini Flatbread


Today I have teamed up with one of my favorite brands, that I keep on hand at all times. Where else can you find a delicious sauce, with only ONE INGREDIENT! Mighty Sesame tahini is creamy, rich and delicious and great on almost everything. I love to serve with roasted veggies, rice, tofu, you name it. The list goes on.


Mighty Sesame offers several products, all containing Sesame. With only one ingredient, Sesame Seeds, that are actually a superfood. The small but mighty sesame seed is a rich source of calcium, protein, fiber, iron and other essential vitamins. It’s shelf stable and ready to use.

(Recipe makes 4 flatbreads)


Ingredients

1-2 red bell pepper, chopped

1-2 zucchinis, sliced

2 shallots, sliced

2 cups of cherry tomatoes

Olive Oil

Salt

Vegan Feta crumbles

Vegan Tzatziki, recipe for one HERE

Green s for garnish

4 White Greek Pita Flatbread





Directions

Preheat oven to 375

Place your bell pepper, zucchini, shallots and tomatoes on a baking sheet

Toss with a little olive oil and season with salt

Bake in preheated oven for roughly 20 minutes, shaking pan 1 or 2 times during cooking

Remove when roasted

Place your flatbread onto baking sheet

Spread a generous amount of Harissa Tahini on top

Sprinkle with vegan feta

Top with grilled vegetables

Bake in preheated oven for 15 minutes

Remove and plate

Drizzle with regular tahini

Top with a couple spoonful's of Tzatziki and garnish with greens

Serve and enjoy
